The short version
Xi'an was Chang'an, the eastern terminus of the Silk Road and, for several centuries, the largest city on earth. Shaanxi Province still trades on that inheritance: the Terracotta Army 40 km east, a city wall you can walk end to end, and a Muslim Quarter whose cooking is Central Asian rather than Chinese.
The city is also the practical centre of any China itinerary. High-speed rail puts Beijing 4h 30m away and Chengdu 3h away, and daily international flights land almost every morning.
For a day, choose between archaeology and altitude. The Terracotta Army and the wall are the obvious pair; Mount Hua is for people who would rather climb than look at glass cases.

Yes. Take the 07:00 train, cable car up the west peak, walk the ridge to the south peak, cable car or shuttle down, and you are back by 20:00. It is a long day with a lot of stair.
A Hui neighbourhood inside the city walls, descended from Silk Road traders. Go for the lamb skewers, the persimmon cakes and the noodle shops on Beiyuanmen — and go hungry.
